Poppy Seed Chicken

Ingredients:
Your stuffed “Moist-N-Tender” baked hen dinner leftovers!
2 to 3 Cups of carved leftover roasted hen meat
2 – Ready made refrigerated pie crusts
1 to 2 Cups of stuffing or dressing (I love a sausage stuffing)
1 to 2 Cups of mashed potatoes
3 – 4 Cups of gravy
1 to 2 Cups of vegetables (I used white corn & baby peas)

Preparation
This entire meal is so easy to prepare because you are using all the leftovers from your stuffed hen dinner the night before! This meal is best made in a spring form pan (cheesecake pan) which allows for an impressive presentation for your guests.

Preheat your oven to 375 degrees. Pre-bake one pie crust in a spring form pan, (this is the pan you will be using to assemble the entire pie – sometimes it is best to fill the center with tin foil in order to keep the sides from caving in while pre-baking). Bake the second crust in a regular cake pan making sure that the sides stay up on the sides of the pan by using the tin foil to hold up the sides while baking. Bake the crust in the spring form pan for approximately 10-12 minutes or until it is no longer doughy. Bake the second pie crust in the regular cake pan for approximately 15-18 minutes or until it begins to slightly turn golden and is cooked thoroughly (do not over bake this crust – this layer will be in the middle of your creation and the gravy will turn the crust into a dumpling like layer).

Assembly: Begin with the crust in the spring form pan. Remove the tin foil and make sure the sides of the crust are standing tall. Spread an even layer of stuffing over the bottom (press firmly) approximately ¼” – ½” thick then top with your vegetable of choice. Next remove the second pie crust from the cake pan and carefully place it on top of the vegetables and press down firmly (use your cake pan to press down the crust, it will keep it from tearing and will ensure the sides stand up tall against the spring form pan). Now fill up this pie crust with your leftover carved hen and smother with a generous amount of your homemade gravy. Reserve some of your gravy warmed up to add as desired when serving. Top with mashed potatoes, sprinkle with salt and pepper and bake in a 375 degree oven for 30-35 minutes or until the gravy starts to bubble and the potato topping turns lightly golden.
Remove from the oven and let stand for approximately 10-15 minutes before serving. Place the entire spring form pan onto a serving platter and carefully unlock the pan allowing the sides to loosen and gently remove the side panel.

You’ll wow your family and friends with this amazing dish. Leftovers never looked or tasted so good. You may want to finish up your meal with a little piece of your “leftover” pumpkin or apple pie!
