Chicken Fruit Salad

Ingredients:
3 – cups of 1” diced all white chicken meat (thawed)
2 – Red apples – core and cube (do not peel)
1 – Cup of green grapes (halves)
½ - Cup of chopped celery pieces
1 – Can of sliced peaches (drained)
1 – Orange peeled and cubed
½ – Cup of chopped walnuts OR chestnuts (optional)
2 – Tbsp of honey
1 – Tbsp of lemon juice
3- Tbsp of mayonnaise
½ - Cup of sour cream
Dash of salt

Preparation
Combine all of the above ingredients together in a large mixing bowl and mix until thoroughly blended. Taste test and add salt or additional mayo if needed. Cover and place in the refrigerator for a minimum of 2 hours or overnight. If you are making a day ahead, keep chicken frozen and place all ingredients in a large zipper lock sealed bag. In the morning the chicken will be thawed and marinated with all the fruit flavors and ready for eating.

Serve as a chilled side dish at your next summer get together or serve in a hollowed out artichoke or in a decorative dish with fruit/vegetable accent as the main dish at a luncheon.
