Chicken broth is vacuum and steam evaporated to produce your requested protein solid levels. Broth is clarified prior to evaporation to ensure low turbidity. Rendered chicken fat, also produced during the cooking process, is packaged in a frozen or shelf stable form in a variety of pack sizes.
Cooked, mechanically separated chicken meat is prepared frozen in corrugated containers or bulk drums. Flavor-rich skin is inspected for defects then bulk packed for frozen storage. Fines are saved during piece-sizing prior to packaging frozen chicken meat.
